For a buffet reception at 200 guests we would staff 1 captain, 8 servers and 2 bartenders. Eleven people, or nine if you are not serving a bar.
The common mistake is assuming a buffet needs fewer staff because guests serve themselves. The food line is the easy part. What decides whether a room feels tended is bussing and clearing, and that runs about one server per 25 guests. At 200 you also want two buffet lines rather than one, or your last guest eats forty minutes after your first.

Plated service needs roughly a third more servers than buffet. Tell us the service style and we will size it exactly.
Standard trained event roles bill in the $20 to $30 per hour range in Atlanta, GA, depending on role, event size and how much lead time we have. That covers servers, bartenders, barbacks, runners, bussers and setup crews.
Captains, floor supervisors and senior leadership bill above that range and are quoted per engagement, because they are running your floor rather than working a station.
Our team members earn $15 to $22 an hour, above typical local hotel rates. That is deliberate, and it is why they show up and stay.
Take the team above and do the arithmetic in the open. Ten standard-rate staff over a six hour call at $20 to $30 an hour is roughly $1,200 to $1,800, with the captain quoted separately on top.
Where you land inside that range depends on the day of the week, the season, the service style and your lead time. A Tuesday corporate lunch and a Saturday gala are different jobs and they price differently.
