The common mistake is assuming a buffet needs fewer staff because guests serve themselves. The food line is the easy part. What decides whether a room feels tended is bussing and clearing, and that runs about one server per 25 guests. At 200 you also want two buffet lines rather than one, or your last guest eats forty minutes after your first.

Plated service needs roughly a third more servers than buffet. Tell us the service style and we will size it exactly.
