The common mistake is assuming a buffet needs fewer staff because guests serve themselves. The food line is the easy part. What decides whether a room feels tended is bussing and clearing, and that runs about one server per 25 guests. At 200 you also want two buffet lines rather than one, or your last guest eats forty minutes after your first.

Plated service needs roughly a third more servers than buffet. Tell us the service style and we will size it exactly.
Standard trained event roles bill in the $20 to $30 per hour range in Charleston, SC, depending on role, event size and how much lead time we have. That covers servers, bartenders, barbacks, runners, bussers and setup crews.
Captains, floor supervisors and senior leadership bill above that range and are quoted per engagement, because they are running your floor rather than working a station.
